Vegetable soup on the menu today.
As I'm in recovery I am not wanting to put butter,cream or potato that many people place in soups to thicken them. I use to love soup so I decided to try and make a recipe that was virtually fat free.
My preference ( but you can use any vegetables you want!!!)
224g Butternut squash ( peeled and cut up into pieces, not too big)
100g Broccoli
164g carrots ( no need to peel them)
350-400ml water boiled in kettle
vegetable,beef &chicken stock ( optional)
Place all vegetables into a pan with the water and or stock, place on a medium heat and bring to the boil. Wait until the vegetables have softened, (you can check with a knife) then remove off the heat. Place the hand blender into the pan and blitz until you get the consistency you want.
How easy was that?
May sound bland but those vegetables combined are beautiful!!!
